Mexico Wins! (The World Record For The Biggest Enchilada)

And it’s about time! Here we were, sitting idly by, wishing, wanting, waiting for somebody to stand up and bring us the whole enchilada! Who was going to do it? We weren’t. You weren’t.

It was beginning to look like our dream of cheese, sauce, and tortilla grandeur was nothing more than that – a dream.

But not anymore!

Somebody must have been hungry.

Pulling together all of their tasty resources, residents of the Mexico City borough Iztapalapa came together last Sunday to create a monstrous concoction. Their goal? A world record. The vessel? A 230-foot-long, 1.5-ton enchilada! Man, we hope they remembered to order guac. We hate it when we forgot to ask for guac!

The ingredients were basic but the final product looked spectacularly delicious. A marriage of corn tortillas, white onions, serrano chilis, green tomatoes, avocado, cheese, cream and a sea of salsas, among other ssseeecccrreeetttt ingredients.

But why even attempt such a feat? It seems that Iztapalapa wants to be a powerful tourist destination. Hmmm. They do realize that once they finish that enchilada, there won’t be anymore “tourist attraction”, right?

Oh well. Maybe they deliver.
